| Green Beans in Tomato Sauce 1/2 tsp. salt 1/2# fresh green stirring beans, trimmed and cut into 2 inch lengths 1/2 Tbs. olive oil 1/2 Tbs. margarine 2 Tbs. finely chopped onions 1/2 tsp. finely chopped garlic 2 medium sized tomatoes, peeled, seeded and finely chopped 1/2 Tbs. dried parsley 1 tsp. sugar 1/4 tsp. black pepper |
| Bring the salt and 2 quarts of water to a boil in a 3-4 quart saucepan. Drop in the beans, a handful at a time. Bring to a boil again, reduce the heat to moderate and boil uncovered for 10 minutes. Drain in a colander and set the beans aside. Heat the oil in a heavy 10-12 inch skillet. Add the onions and garlic and stirring frequently, cook over moderate heat for 5 minutes or until the onions are soft and transparent but not brown. Stir in the tomatoes, sugar and some black pepper. Bring to a boil and cook uncovered until most of liquid has evaporated. Add green beans and simmer for a minute or two or until they are heated through. Taste for seasoning. Add the parsley. Add salt and pepper to taste. This is good reheated too. |
